Waitress was released to U.S. theaters on May 2, 2007 and grossed $22 million at the box office with a budget of $1.5 million.
The film was written and directed by Adrienne Shelly, who also played the role of Dawn in the movie. Sadly, Shelly was murdered in her apartment in New York City three months before the movie's premiere at the Sundance Film Festival. The film has since been dedicated to her memory.
Keri Russell, who played the lead role of Jenna, was pregnant during filming. To conceal her pregnancy, the filmmakers used a variety of techniques, such as strategic camera angles and wardrobe choices.
The pies featured in the movie were created by Stacy Donnelly, a professional pie maker, hired as a consultant for the film. Donnelly not only baked the pies for the movie, but she also taught Keri Russell and the other actresses how to make them.
The character of Dr. Pomatter, played by Nathan Fillion, was originally written as a much older man. However, after Fillion auditioned for the role, the filmmakers decided to rewrite the character to be closer to Fillion's age.
The movie was shot on location in Southern California, in towns such as Simi Valley and Fillmore. The diner used in the movie was a real diner called the Hi-Way Cafe in Fillmore, which is no longer in business.
