For the final soup recipe of the day, she makes minestrone and replaces traditional pasta with much healthier chickpea pasta made by Banza. Here is the full list of ingredients: onion, zucchini, yellow squash, spinach, tomato paste, kidney beans, carrots, one potato (optional), salt, pepper, oregano, ground white pepper, Italian seasoning, cumin, and garlic powder.
